1 tsp olive oil
3/4 lb ground chicken
1 garlic clove
1 cup pasta sauce
2 medium zucchini
2 Tbsp Parmesan cheese
Basil, for garnish (optional)
Preheat oven to 400°F.
Heat olive oil in a large skillet over medium-high heat. Add chicken. Cook 8-10 minutes, or until cooked through.
Reduce heat to low. Add garlic. Cook 1 minute, stirring often. Add pasta sauce. Cook 3 minutes, stirring occasionally.
While chicken cooks, cut each zucchini in half, lengthwise to make four boats. Use a spoon to scoop out seeds and center each zucchini, leaving 1/4-inch thick zucchini boat.
Place the zucchini in baking dish, cut-side up.
Spoon chicken mixture evenly into zucchini boats.
Sprinkle with cheese.
Cover baking dish with foil. Bake 35 minutes.
Sprinkle with fresh basil (optional).
