Ingredients

  • 1 tsp olive oil

  • 3/4 lb ground chicken

  • 1 garlic clove

  • 1 cup pasta sauce

  • 2 medium zucchini

  • 2 Tbsp Parmesan cheese

  • Basil, for garnish (optional)


Directions

  1. Preheat oven to 400°F.

  2. Heat olive oil in a large skillet over medium-high heat. Add chicken. Cook 8-10 minutes, or until cooked through.

  3. Reduce heat to low. Add garlic. Cook 1 minute, stirring often. Add pasta sauce. Cook 3 minutes, stirring occasionally.

  4. While chicken cooks, cut each zucchini in half, lengthwise to make four boats. Use a spoon to scoop out seeds and center each zucchini, leaving 1/4-inch thick zucchini boat.

  5. Place the zucchini in baking dish, cut-side up.

  6. Spoon chicken mixture evenly into zucchini boats.

  7. Sprinkle with cheese.

  8. Cover baking dish with foil. Bake 35 minutes.

  9. Sprinkle with fresh basil (optional).
