Ingredients

  • 1/2 lb ground chicken

  • 1/4 cup mozzarella cheese, shredded

  • 1 egg

  • 1/2 tsp sea salt

  • 1/4 tsp pepper

  • 1 tsp Italian seasoning

  • Pinch of crushed red pepper (optional).

  • 1 cup tomato sauce, divided

  • 2 cups vegetables for topping (peppers, tomatoes, spinach, etc.).

  • 2 tsp parmesan cheese, shredded


Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the raw chicken, mozzarella, egg, and seasonings. Mix well. Divide and place on parchment paper forming two equal individual pizzas.

  3. Using clean hands or gloves, pat the raw chicken mixture firmly into paper, spreading it thin without creating holes (about ¼ inch thick).

  4. Bake 15 to 20 minutes or until edges and top begin to brown.

  5. Remove from oven. Let cool for 10 minutes. Top each pizza with 1/2 cup tomato sauce and vegetables of choice.

  6. Return to oven and bake for another 10 to 15 minutes.

  7. Remove from oven. Top with 1 tsp parmesan cheese.
