Ingredients

  • 12 oz. chicken breasts

  • 1 tbsp olive oil

  • 3 garlic cloves, minced

  • 2 cups sweet potatoes, peeled and diced

  • 1/2 cup chicken broth

  • 2 cups asparagus, cut into 2-inch pieces

  • 1 cup yellow pepper, diced

  • 1 cup spinach

  • Sea salt and pepper to taste

  • 1/2 tsp red chili flakes


Directions

  1. Cut Chicken into small pieces and season with salt and pepper

  2. In a skillet over medium heat, add olive oil, garlic and chicken. Sauté, stirring well for about 7-10 minutes or until cooked through. Set aside.

  3. In the same skillet, add sweet potato and chicken broth.

  4. Cook for about 7-10 minutes or until sweet potatoes are tender.

  5. Add asparagus & yellow peppers and cook for about 4-5 minutes.

  6. Add spinach and season with salt, pepper, and chili flakes.

  7. Add the chicken back into pan and let cook until spinach is wilted. Turn heat off.

  8. Divide into 4 equal servings. Enjoy!
