12 oz. chicken breasts
1 tbsp olive oil
3 garlic cloves, minced
2 cups sweet potatoes, peeled and diced
1/2 cup chicken broth
2 cups asparagus, cut into 2-inch pieces
1 cup yellow pepper, diced
1 cup spinach
Sea salt and pepper to taste
1/2 tsp red chili flakes
Cut Chicken into small pieces and season with salt and pepper
In a skillet over medium heat, add olive oil, garlic and chicken. Sauté, stirring well for about 7-10 minutes or until cooked through. Set aside.
In the same skillet, add sweet potato and chicken broth.
Cook for about 7-10 minutes or until sweet potatoes are tender.
Add asparagus & yellow peppers and cook for about 4-5 minutes.
Add spinach and season with salt, pepper, and chili flakes.
Add the chicken back into pan and let cook until spinach is wilted. Turn heat off.
Divide into 4 equal servings. Enjoy!
