2 Tbsp Olive Oil
2 Tbsp Fresh Lemon Juice
1/2 tsp Sea Salt
1/4 Cup Cooked Brown Rice
2-1/2 Cups Spinach
1/2 Cup Cherries, pitted and halved
1/4 Cup Chickpeas, rinsed
1/2 Cup Red Onion, finely chopped
1/2 Cup Cherry Tomatoes, halved
1/2 Cup Artichoke Hearts, rinsed and quartered
6 oz Grilled Chicken, diced
2 oz Feta Cheese
2 oz Walnuts Chopped
In a small bowl whisk the olive oil, lemon juice and salt. Set aside.
In your large salad bowl add the brown rice and pour half of the olive oil and lemon mixture on top. Toss to combine.
Add the spinach, cherries, chickpeas, red onions, tomatoes and artichokes. Toss to combine.
Add chicken, feta and walnuts. Drizzle the remaining dressing on top. Serve.
