1 head of cauliflower, chopped (can use orange/purple cauliflower or Romanesco for more color!)
2 carrots, peeled and sliced or 1/2 cup shredded
2 celery stalks, diced
1/2 cup diced onion
3 Tbsp olive oil, or to taste
1 tsp poultry seasoning
1/2 tsp thyme
1/2 tsp sage
Salt and pepper to taste
Prepare vegetables
Toss with olive oil and seasonings
Roast in 425-degree oven for 25-30 minutes or until desired doneness
Stir after 15 minutes
