Ingredients

  • 1 head of cauliflower, chopped (can use orange/purple cauliflower or Romanesco for more color!)

  • 2 carrots, peeled and sliced or 1/2 cup shredded

  • 2 celery stalks, diced

  • 1/2 cup diced onion

  • 3 Tbsp olive oil, or to taste

  • 1 tsp poultry seasoning

  • 1/2 tsp thyme

  • 1/2 tsp sage

  • Salt and pepper to taste


Directions

  1. Prepare vegetables

  2. Toss with olive oil and seasonings

  3. Roast in 425-degree oven for 25-30 minutes or until desired doneness

  4. Stir after 15 minutes
