Ingredients

  • 1 cup cauliflower, riced and cooked (steamed or boiled)

  • 1-1/2 cups mozzarella cheese, shredded

  • 1 egg, beaten

  • 1 tsp dried oregano

  • 1/2 tsp garlic, minced

  • 1/2 tsp sea salt

  • 1 cup tomato sauce

  • 1 cup vegetables (optional), choose your favorite


Directions

  1. Preheat oven to 450°F. Grease baking sheet with a dab of olive oil.

  2. In a medium bowl, mix egg, cauliflower, 1 cup mozzarella, and spices. Transfer onto the baking sheet and spread out into a 9-inch circle.

  3. Bake 15 minutes. Remove from oven. Let cool for about 5 mins.

  4. Spread tomato sauce evenly over crust. Top with remaining mozzarella and vegetables.

  5. Return to oven. Bake for 5 to 7 minutes or until cheese is melted, bubbly, and golden-brown.

  6. Remove from oven. Cool slightly before cutting.
