1 cup cauliflower, riced and cooked (steamed or boiled)
1-1/2 cups mozzarella cheese, shredded
1 egg, beaten
1 tsp dried oregano
1/2 tsp garlic, minced
1/2 tsp sea salt
1 cup tomato sauce
1 cup vegetables (optional), choose your favorite
Preheat oven to 450°F. Grease baking sheet with a dab of olive oil.
In a medium bowl, mix egg, cauliflower, 1 cup mozzarella, and spices. Transfer onto the baking sheet and spread out into a 9-inch circle.
Bake 15 minutes. Remove from oven. Let cool for about 5 mins.
Spread tomato sauce evenly over crust. Top with remaining mozzarella and vegetables.
Return to oven. Bake for 5 to 7 minutes or until cheese is melted, bubbly, and golden-brown.
Remove from oven. Cool slightly before cutting.
