2 Tbsp olive oil
1 cup onion, diced
3 cloves garlic, chopped
1/2 cup celery, diced
1 cup bell pepper, diced

2 cups vegetable broth
1 bay leaf
4 cups cauliflower, riced
Sea salt and pepper to taste
Hot sauce to taste
Heat 1 Tbsp oil in a medium skillet over medium heat. Add onion. Sauté until translucent, then add garlic, celery, and peppers. Sauté for 15 minutes or until vegetables are tender.
Stir in 1 Tbsp Cajun Seasoning, broth, and bay leaf. Reduce heat to low and let simmer 10 minutes.
Heat remaining oil in a large skillet over high heat. Add Cauliflower. Cook for 5 minutes, stirring occasionally, until it is cooked but still firm. Remove from heat.
Remove and discard bay leaf from first skillet. Add vegetables to skillet with cauliflower. Stir to combine.
Season with salt, pepper, hot sauce, and Cajun Seasoning to taste.
