1 tsp sugar in the Raw
2 tsp fresh lime juice
1 Tbsp olive oil
2 tsp white vinegar
Sea salt and pepper to taste
2 cups mango, sliced
2 cups tomatoes, sliced
1/4 cup red onion, sliced
Fresh cilantro for garnish
In a small dish whisk together sugar, lime juice, olive oil, vinegar, salt and pepper. Set aside.
Place mangos, tomatoes and onions in a large bowl and drizzle dressing on top. Toss to combine. Garnish with cilantro before serving.
Divide into 4 equal servings.
