Cajun Turkey and Vegetables

Ingredients

  • 24 oz ground turkey

  • Cajun or Creole seasoning to taste

  • 1 Tbsp olive oil

  • 2 cups onion, diced

  • 2 cups green bell pepper, chopped

  • 1 tsp sea salt

  • 4 cups tomatoes, diced

  • 2 cups cooked brown rice with chicken or vegetable Broth


Directions

  1. Heat a large pot over medium-high heat.

  2. Add ground turkey and season well with Cajun/Creole seasoning. Break with a spatula and sauté until browned.

  3. Once fully cooked, remove turkey from heat and set aside.

  4. Add 1 Tbsp olive oil to the pan, turn heat to high and add onions, bell peppers and additional seasoning.

  5. Cook, stirring occasionally, until vegetables are softened and browned.

  6. Add tomatoes to the onions and bell peppers, cook for 1 minute.

  7. Add turkey back in along with the cooked rice and stir well to combine.
