1 tsp olive oil
2 6-oz salmon fillets
2 tsp Cajun seasoning
1/3 cup chicken or vegetable broth
3 cloves garlic, minced
Juice from 1 lemon
1 tsp honey
1 Tbsp parmesan cheese, grated
Heat olive oil in a large skillet over medium-high heat. Season salmon with 1 tsp Cajun seasoning. Add to skillet skin-side-up. Cook about 6 minutes, or until golden-brown. Flip and cook 2 more minutes. Remove from skillet and set aside.
Stir in broth, garlic, lemon juice, honey, 1 tsp Cajun seasoning and Parmesan cheese. Bring to a simmer.
Reduce heat and return salmon to skillet. Simmer 3 minutes, or until sauce is reduced and salmon is cooked through.
