Ingredients

  • 3 cups butternut squash, peeled and cubed

  • 1-1/2 cups granny smith apples, peeled and diced

  • 3/4 cup vidalia onion, chopped

  • 3/4 cup carrots, shredded

  • 3/4 cup celery, chopped

  • 3/4 cup red pepper, chopped

  • 2 cloves garlic, chopped

  • 3 cups chicken broth

  • 1/2 can lite coconut milk

  • Sea salt & pepper - to taste

  • Plain Greek yogurt (optional)

  • Chives (optional)

  • Pepitas (optional)


Directions

  1. In a large pot over medium heat, simmer squash, apples, onion, carrots, celery, red pepper, garlic and chicken broth until soft.

  2. Add coconut milk, salt and pepper. Simmer 30–60 minutes.

  3. Puree in a blender in batches, then return to pot and stir.

  4. Separate into 3 equal servings and enjoy.

  5. Try optional toppings like pepitas, chives or plain Greek yogurt for extra flavor!
