3 cups butternut squash, peeled and cubed
1-1/2 cups granny smith apples, peeled and diced
3/4 cup vidalia onion, chopped
3/4 cup carrots, shredded
3/4 cup celery, chopped
3/4 cup red pepper, chopped
2 cloves garlic, chopped
3 cups chicken broth
1/2 can lite coconut milk
Sea salt & pepper - to taste
Plain Greek yogurt (optional)
Chives (optional)
Pepitas (optional)
In a large pot over medium heat, simmer squash, apples, onion, carrots, celery, red pepper, garlic and chicken broth until soft.
Add coconut milk, salt and pepper. Simmer 30–60 minutes.
Puree in a blender in batches, then return to pot and stir.
Separate into 3 equal servings and enjoy.
Try optional toppings like pepitas, chives or plain Greek yogurt for extra flavor!
