Burrito Bowl Mason Jar Salad

Ingredients

  • 1/4 cup cilantro, chopped

  • 2 tsp lime juice

  • 2 tsp olive oil

  • 1/2 Tbsp taco seasoning, or to taste

  • 1/2 cup cooked quinoa (measure after cooking)

  • 2 pint-sized Mason jars

  • 1/4 cup plain Greek yogurt

  • 1/2 cup sweet potatoes, cooked and diced

  • 1/4 cup shredded cheese

  • 12 oz chicken breast, cooked and chopped into cubes (measure before cooking)

  • 2 cups lettuce, chopped

  • 1 cup salsa

  • 1/2 cup corn


Directions

  1. In a small bowl combine cilantro, lime juice, oil, taco seasoning, and quinoa. Mix well and set aside.

  2. Layer half of each ingredient into each jar in this order: yogurt, potatoes, quinoa mixture, corn, cheese, and chicken. Fill remaining space with lettuce. Top with a sprinkle of cilantro.

  3. Cover and refrigerate until ready to serve.
