1/4 cup cilantro, chopped
2 tsp lime juice
2 tsp olive oil
1/2 Tbsp taco seasoning, or to taste
1/2 cup cooked quinoa (measure after cooking)
2 pint-sized Mason jars
1/4 cup plain Greek yogurt
1/2 cup sweet potatoes, cooked and diced
1/4 cup shredded cheese
12 oz chicken breast, cooked and chopped into cubes (measure before cooking)
2 cups lettuce, chopped
1 cup salsa
1/2 cup corn
In a small bowl combine cilantro, lime juice, oil, taco seasoning, and quinoa. Mix well and set aside.
Layer half of each ingredient into each jar in this order: yogurt, potatoes, quinoa mixture, corn, cheese, and chicken. Fill remaining space with lettuce. Top with a sprinkle of cilantro.
Cover and refrigerate until ready to serve.
