1 Tbsp olive oil
1 Tbsp lemon juice
1 Tbsp water
1/4 tsp Dijon mustard
Sea salt & pepper, to taste
1 cup brussels sprouts, thinly sliced or shredded
1 cup romaine lettuce, chopped
1/3 cup sliced almonds
1/2 cup pomegranate seeds (arils)
1/4 cup parmesan cheese, shaved
In bowl large enough for all ingredients, whisk together - oil, lemon juice, water, Dijon mustard, salt and pepper.
Add brussels sprouts, romaine, almonds and pomegranate seeds. Toss to coat.
For the best flavor - let salad sit for about 20 minutes, tossing at least twice to ensure the dressing has covered all ingredients.
Top with parmesan cheese and enjoy!
