Ingredients

  • 1 Tbsp olive oil

  • 1 Tbsp lemon juice

  • 1 Tbsp water

  • 1/4 tsp Dijon mustard

  • Sea salt & pepper, to taste

  • 1 cup brussels sprouts, thinly sliced or shredded

  • 1 cup romaine lettuce, chopped

  • 1/3 cup sliced almonds

  • 1/2 cup pomegranate seeds (arils)

  • 1/4 cup parmesan cheese, shaved


Directions

  1. In bowl large enough for all ingredients, whisk together - oil, lemon juice, water, Dijon mustard, salt and pepper.

  2. Add brussels sprouts, romaine, almonds and pomegranate seeds. Toss to coat.

  3. For the best flavor - let salad sit for about 20 minutes, tossing at least twice to ensure the dressing has covered all ingredients.

  4. Top with parmesan cheese and enjoy!
