Ingredients

  • 1-1/2 lbs chicken breast, cut thin

  • Sea salt & pepper to taste

  • 2 tsp garlic powder

  • 1 Tbsp Italian seasoning

  • 3 Tbsp olive oil

  • 1 tsp butter

  • 4 cups tomatoes, diced

  • 1/2 cup red onion, minced

  • 2 garlic cloves

  • 1/3 cup plus 2 Tbsp fresh basil, chopped

  • 2 Tbsp parmesan cheese, grated

  • Balsamic vinegar, garnish


Directions

  1. Season chicken on both sides with salt, pepper, garlic powder, and Italian seasoning.

  2. Heat 2 Tbsp olive oil and butter in a large skillet over medium heat. Add chicken. Cook 8-10 minutes, until browned on both sides.

  3. In a small bowl, combine 1 Tbsp olive oil, tomatoes, red onion, garlic, and 1/3 cup fresh basil. Mix well.

  4. Divide chicken into 4 equal servings. Top each with equal amounts of tomato mixture, 1/2 Tbsp parmesan cheese, and a sprinkle of basil.

  5. Garnish with a drizzle of vinegar. Serve immediately.
