1-1/2 lbs chicken breast, cut thin
Sea salt & pepper to taste
2 tsp garlic powder
1 Tbsp Italian seasoning
3 Tbsp olive oil
1 tsp butter
4 cups tomatoes, diced
1/2 cup red onion, minced
2 garlic cloves
1/3 cup plus 2 Tbsp fresh basil, chopped
2 Tbsp parmesan cheese, grated
Balsamic vinegar, garnish
Season chicken on both sides with salt, pepper, garlic powder, and Italian seasoning.
Heat 2 Tbsp olive oil and butter in a large skillet over medium heat. Add chicken. Cook 8-10 minutes, until browned on both sides.
In a small bowl, combine 1 Tbsp olive oil, tomatoes, red onion, garlic, and 1/3 cup fresh basil. Mix well.
Divide chicken into 4 equal servings. Top each with equal amounts of tomato mixture, 1/2 Tbsp parmesan cheese, and a sprinkle of basil.
Garnish with a drizzle of vinegar. Serve immediately.
