3 Tbsp olive oil
2 cloves garlic, pressed
1/2 tsp red pepper flakes
6 cups broccoli crowns, halved
1 oz raw almonds, sliced or chopped
1 tsp fresh lemon Juice
Zest from half a lemon
3 Tbsp freshly grated parmesan cheese
Sea salt and pepper to taste
Preheat the oven to 450 degrees and line a baking sheet with tin foil
In a large bowl whisk the olive oil, garlic and red pepper flakes. Add the broccoli to the bowl and toss to coat thoroughly. Arrange the broccoli on the baking sheet and sprinkle with salt.
Roast broccoli for about 10-12 minutes, or until just barely browned on the broccoli stalks. Remove the baking sheet from the oven, flip the broccoli and sprinkle the almond slices over top. Roast for an additional 8 minutes, or until broccoli is fork tender.
Remove from the oven and lay broccoli on a platter. Top with lemon juice, lemon zest and cheese.
Divide into 3 equal servings.
