4 eggs
1/2 cup whole milk
Sea salt and pepper to taste
2 Tbsp green onion, chopped
1/2 cup spinach, chopped
3/4 cup cheddar cheese, shredded
2 large green bell peppers, halved (or any color of choice)
Preheat the oven to 350 degrees F.
In a bowl mix eggs, milk, salt, pepper, green onions, spinach and 1/2 cup of cheese until combined.
Lay the peppers in a baking dish (snug so that they don’t move or spill). Fill each pepper with the egg mixture evenly.
Sprinkle each pepper with the remaining cheese. Bake for 45-50 minutes or until eggs are set.
