Ingredients

  • 4 eggs

  • 1/2 cup whole milk

  • Sea salt and pepper to taste

  • 2 Tbsp green onion, chopped

  • 1/2 cup spinach, chopped

  • 3/4 cup cheddar cheese, shredded

  • 2 large green bell peppers, halved (or any color of choice)


Directions

  1. Preheat the oven to 350 degrees F.

  2. In a bowl mix eggs, milk, salt, pepper, green onions, spinach and 1/2 cup of cheese until combined.

  3. Lay the peppers in a baking dish (snug so that they don’t move or spill). Fill each pepper with the egg mixture evenly.

  4. Sprinkle each pepper with the remaining cheese. Bake for 45-50 minutes or until eggs are set.
