Ingredients

  • 1/4 cup brown rice, dry

  • 1/2 cup + 1 Tbsp whole milk

  • 1 tsp vanilla extract

  • 1/4 cup blueberries

  • 1 tsp butter

  • 1/4 cup figs, quartered

  • 1 Tbsp chia seeds

  • 1 oz pisatchios

  • 1/4 tsp honey


Directions

  1. Place rice, 1/2 cup milk and vanilla in a pot and bring to a boil, reduce the heat, cover and simmer for about 40 minutes or until the milk is absorbed.

  2. Just before you remove the pot from the heat add blueberries and butter and heat until the berries start to release their juices.

  3. Remove from heat and pour into a bowl. Top with 1 Tbsp milk, figs, chia seeds, pistachios and honey. Serve.
