Ingredients

  • 1 oz roasted almonds

  • 1 Tbsp coconut oil

  • 1 Tsp ground cinnamon

  • 1-1/2 Tbsp sunflower seeds

  • 1/2 cup Greek yogurt

  • 1/2 cup cooked quinoa

  • 1/2 cup blackberries

  • 3 mint leaves (optional)


Directions

  1. Preheat the oven to 400 degrees F.

  2. Toss almonds in coconut oil and place on a baking sheet.

  3. Roast almonds in oven for 5-10 minutes. Sprinkle with cinnamon.

  4. Combine all ingredients into a bowl and top with the roasted almonds.
