1 cup ripe banana, mashed
2 eggs
1/8 tsp ground cinnamon
1 tsp vanilla extract
1 Tbsp coconut oil
2 tsp butter
1 cup plain Greek yogurt
Pure maple syrup or honey (optional)
In a small bowl, combine mashed banana and eggs. Mix well.
Add cinnamon and vanilla.
Melt coconut oil in frying pan over medium heat.
Pour 1/4 of the batter into pan. Cook until set, about 1 minute. Flip with spatula and cook another 30 seconds. Remove from pan.
Repeat 3 more times to make 4 pancakes.
Top 2 pancakes with 1 tsp butter, 1/2 cup plain Greek yogurt, and 1 tsp honey or maple syrup (optional).
