Ingredients

  • 1 cup ripe banana, mashed

  • 2 eggs

  • 1/8 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 1 Tbsp coconut oil

  • 2 tsp butter

  • 1 cup plain Greek yogurt

  • Pure maple syrup or honey (optional)


Directions

  1. In a small bowl, combine mashed banana and eggs. Mix well.

  2. Add cinnamon and vanilla.

  3. Melt coconut oil in frying pan over medium heat.

  4. Pour 1/4 of the batter into pan. Cook until set, about 1 minute. Flip with spatula and cook another 30 seconds. Remove from pan.

  5. Repeat 3 more times to make 4 pancakes.

  6. Top 2 pancakes with 1 tsp butter, 1/2 cup plain Greek yogurt, and 1 tsp honey or maple syrup (optional).
