1 tsp- 1 Tbsp coconut oil
1 ripe banana, mashed
2 eggs
1 cup shredded carrots
1 tsp vanilla extract
1/8 tsp ground cinnamon
Heat coconut oil in a skillet on medium heat.
In a separate bowl combine the mashed banana, eggs, shredded carrots, vanilla and cinnamon and stir until well combined.
Pour the batter in the skillet and cook for about 1-2 minutes, or until lightly browned.
Flip and cook the other side for another minute, or until completely cooked throughout.
Serve immediately.
