Ingredients

  • 1 tsp- 1 Tbsp coconut oil

  • 1 ripe banana, mashed

  • 2 eggs

  • 1 cup shredded carrots

  • 1 tsp vanilla extract

  • 1/8 tsp ground cinnamon


Directions

  1. Heat coconut oil in a skillet on medium heat.

  2. In a separate bowl combine the mashed banana, eggs, shredded carrots, vanilla and cinnamon and stir until well combined.

  3. Pour the batter in the skillet and cook for about 1-2 minutes, or until lightly browned.

  4. Flip and cook the other side for another minute, or until completely cooked throughout.

  5. Serve immediately.
