1 tsp olive oil
2 6-oz cod fillets
Sea salt and pepper to taste
2 tsp butter
1 lemon, sliced
2-3 garlic cloves, chopped
2 Tbsp fresh parsley, chopped
White wine, splash (optional)
Preheat oven to 400°F. Grease baking dish bottom with olive oil.
Pat fish dry with paper towels. Season with salt and pepper and place in baking dish.
Top each fillet with 1 tsp butter and lemon slices, then sprinkle with chopped garlic, fresh parsley and a splash of white wine (optional).
Bake 10-15 minutes or until fish is opaque / flakes easily with a fork.
