Ingredients

  • 1 tsp olive oil

  • 2 6-oz cod fillets

  • Sea salt and pepper to taste

  • 2 tsp butter

  • 1 lemon, sliced

  • 2-3 garlic cloves, chopped

  • 2 Tbsp fresh parsley, chopped

  • White wine, splash (optional)


Directions

  1. Preheat oven to 400°F. Grease baking dish bottom with olive oil.

  2. Pat fish dry with paper towels. Season with salt and pepper and place in baking dish.

  3. Top each fillet with 1 tsp butter and lemon slices, then sprinkle with chopped garlic, fresh parsley and a splash of white wine (optional).

  4. Bake 10-15 minutes or until fish is opaque / flakes easily with a fork.
