1 acorn squash, halved and de-seeded
1 tsp butter
12 oz ground turkey, 97% lean
1 cup apple, chopped
1/2 cup mushrooms, chopped
1/2 cup onions, diced
1 cup spinach, chopped
1 tsp rosemary
1/4 cup vegetable stock
Sea salt & pepper, to taste
Preheat oven to 450°F. Line a baking tray with foil or parchment paper and spray with olive oil cooking spray.
Cut squash in half and remove seeds. Place on baking sheet with inside facing down. Cook 25 minutes or until fork-tender.
In a large skillet, sauté turkey in butter until browned.
Add apples, mushrooms, onions, spinach, rosemary, vegetable stock, salt and pepper. Sauté an additional 5 minutes.
Remove squash when finished. Fill each with half of the turkey and apple mixture.
Return squash to oven. Broil 2-3 minutes, or until top is crispy.
