Ingredients

  • Organic non-stick cooking spray or coconut oil

  • 9 eggs

  • 1 cup whole milk

  • 1/2 cup vegetable(s) of choice, chopped (optional)

  • Sea salt and pepper to taste

  • 1/2 cup shredded cheese


Directions

  1. Preheat oven to 350°F. Grease muffin cups with cooking spray or coconut oil.

  2. Whisk eggs and milk together in a mixing bowl.

  3. Add chopped vegetables (optional) and seasonings.

  4. Pour evenly into 12 muffin cups.

  5. Sprinkle the cheese evenly among cups.

  6. Bake for about 20 to 30 minutes or until set.
