Organic non-stick cooking spray or coconut oil
9 eggs
1 cup whole milk
1/2 cup vegetable(s) of choice, chopped (optional)
Sea salt and pepper to taste
1/2 cup shredded cheese
Preheat oven to 350°F. Grease muffin cups with cooking spray or coconut oil.
Whisk eggs and milk together in a mixing bowl.
Add chopped vegetables (optional) and seasonings.
Pour evenly into 12 muffin cups.
Sprinkle the cheese evenly among cups.
Bake for about 20 to 30 minutes or until set.
