Ingredients

  • 1 14-oz can black beans, drained and patted dry

  • 1 Tbsp olive oil

  • 3/4 cup bell pepper, finely chopped

  • 1 cup yellow onion, chopped

  • 3 cloves garlic

  • 1-1/2 tsp ground cumin

  • 1 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 cup breadcrumbs or oatmeal

  • 1/2 cup feta cheese

  • 2 large eggs

  • 1 Tbsp Worcestershire sauce (some are not vegetarian, check the label)

  • 2 Tbsp tomato paste

  • Sea salt and pepper to taste


Directions

  1. Preheat oven to 325°F. Spread beans evenly onto a lined baking sheet. Bake 15 minutes, until slightly dried out.

  2. While beans cook, sauté oil, bell pepper, onion, and garlic over medium heat for 5 to 6 minutes or until onions and peppers are soft. Blot dry with a paper towel.

  3. In a large bowl, combine cooked pepper / onion mix, garlic, cumin, chili powder, garlic powder, breadcrumbs, cheese, eggs, Worcestershire, tomato paste and salt. Mix well. Add beans and mix again, leaving some bean chunks.

  4. Form into 5 patties. Place patties on a lined baking sheet.

  5. Bake at 375°F for 10 to 12 minutes per side or lightly grease a sheet of foil and grill over medium-high heat (350 to 400°F) for 8 to 10 minutes per side.
