1 14-oz can black beans, drained and patted dry
1 Tbsp olive oil
3/4 cup bell pepper, finely chopped
1 cup yellow onion, chopped
3 cloves garlic
1-1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 cup breadcrumbs or oatmeal
1/2 cup feta cheese
2 large eggs
1 Tbsp Worcestershire sauce (some are not vegetarian, check the label)
2 Tbsp tomato paste
Sea salt and pepper to taste
Preheat oven to 325°F. Spread beans evenly onto a lined baking sheet. Bake 15 minutes, until slightly dried out.
While beans cook, sauté oil, bell pepper, onion, and garlic over medium heat for 5 to 6 minutes or until onions and peppers are soft. Blot dry with a paper towel.
In a large bowl, combine cooked pepper / onion mix, garlic, cumin, chili powder, garlic powder, breadcrumbs, cheese, eggs, Worcestershire, tomato paste and salt. Mix well. Add beans and mix again, leaving some bean chunks.
Form into 5 patties. Place patties on a lined baking sheet.
Bake at 375°F for 10 to 12 minutes per side or lightly grease a sheet of foil and grill over medium-high heat (350 to 400°F) for 8 to 10 minutes per side.
