1 Tbsp olive oil
2 cloves garlic, minced
Fresh ginger, 1-inch piece, grated
1 egg
2 cups brown rice, cooked
2 cups broccoli, chopped
1 cup peas
1/2 cup carrots, shredded
1/2 cup corn
2 cups mushrooms
1/2 cup onion, chopped
1/2 Tbsp rice vinegar
2 Tbsp tamari or soy sauce
Fresh chives, basil or other preferred flavorings
1 tsp sesame oil
Heat 1 Tbsp olive oil in a large pan over medium heat. Add garlic and ginger. Stir fry 1 minute.
Crack egg directly into the pan and gently stir until barely cooked, 1-2 minutes.
Add rice and stir fry for a few minutes, adding remaining olive oil and turning heat up to get it sizzling. The egg should incorporate and stick to the rice.
Add all vegetables, rice vinegar and tamari. Stir fry for another 1-2 minutes.
Remove from heat. Stir in 1 tsp sesame oil and your preferred flavorings.
Divide into 4 equal servings.
