Ingredients

  • 2 Tbsp olive oil

  • 1/2 cup onion, chopped

  • 1/2 cup celery, chopped

  • 1 garlic clove, chopped

  • 1 14.5-oz can diced tomatoes

  • 1 cup mixed vegetables (example - corn, peas, green beans, carrots)

  • 1 cup potatoes, diced

  • 1 cup cabbage, thinly sliced

  • 1 Tbsp dried parsley

  • 1 bay leaf

  • 1 Tbsp of Old Bay or Philips Seafood seasoning

  • 2 cups vegetable stock (more if needed)

  • Sea salt & pepper, to taste


Directions

  1. Heat oil in a medium to large pot over medium-high heat. Add onions, celery, and garlic. Saute until onions are translucent, stirring occasionally.

  2. Add remaining vegetables, potatoes and seasonings. Stir about 2 minutes. Add vegetable stock. Stir occasionally.

  3. Bring to a boil, then reduce heat to a low simmer. Allow the flavors to marry; until vegetables and potatoes are cooked as you like. Adjust seasoning, if needed.

  4. Remove from heat. Discard bay leaf. Serve immediately.
