Vegetable Quinoa Quiche

Ingredients

  • 5 eggs

  • 4 tsp butter

  • 4 oz feta cheese

  • 1/2 cup whole milk

  • 2 cups quinoa, cooked and chilled

  • 1/2 tsp garlic powder

  • 1 Tbsp Dijon mustard

  • 3 cups fresh baby spinach

  • 1/2 cup onion, chopped

  • 1/2 cup mushrooms

  • Sea salt & pepper, to taste


Directions

  1. Preheat oven to 350° F.

  2. In a bowl, combine quinoa, salt, pepper and 1 egg. Mix well. Line a 9-inch pie pan with parchment paper. Press quinoa mixture into the bottom and sides of pan. Bake 20 minutes. Set aside to cool.

  3. In a skillet over medium heat, sauté butter and spinach for 3 minutes. Remove from heat.

  4. In a large bowl, whisk remaining 4 eggs and milk until frothy. Add garlic powder, mustard, salt, pepper, sautéed spinach, onions and mushrooms. Mix well.

  5. Add feta cheese. Pour ingredients into the pie pan.

  6. Bake 20-25 minutes. Let cool before cutting and serving.
