5 eggs
4 tsp butter
4 oz feta cheese
1/2 cup whole milk
2 cups quinoa, cooked and chilled
1/2 tsp garlic powder
1 Tbsp Dijon mustard
3 cups fresh baby spinach
1/2 cup onion, chopped
1/2 cup mushrooms
Sea salt & pepper, to taste
Preheat oven to 350° F.
In a bowl, combine quinoa, salt, pepper and 1 egg. Mix well. Line a 9-inch pie pan with parchment paper. Press quinoa mixture into the bottom and sides of pan. Bake 20 minutes. Set aside to cool.
In a skillet over medium heat, sauté butter and spinach for 3 minutes. Remove from heat.
In a large bowl, whisk remaining 4 eggs and milk until frothy. Add garlic powder, mustard, salt, pepper, sautéed spinach, onions and mushrooms. Mix well.
Add feta cheese. Pour ingredients into the pie pan.
Bake 20-25 minutes. Let cool before cutting and serving.
