1 Tbsp olive oil
1 lb. (10 cups) spinach
1 Tbsp butter
2 cups mushrooms, sliced
1 cup red or yellow bell peppers, chopped
1 cup onion, chopped
2 cloves garlic, minced
1/4 cup whole wheat flour
Sea salt and pepper to taste
1/2 tsp thyme
2-1/2 cups whole milk
2 cups cooked brown rice
18 oz. turkey, cooked and chopped into bite-sized pieces
1/2 cup parmesan cheese, shredded
Preheat oven to 350 degrees Fº.
In a skillet, cook and sauté spinach in the olive oil for 3-4 minutes or until the spinach is wilted. Put the cooked spinach in a colander to drain.
In the same skillet, add butter over medium heat. Stir in mushrooms, peppers, onions, and garlic. Cook until tender. Stir in flour, salt, pepper, and thyme. Slowly add the milk while constantly stirring or whisking. Continue this until the sauce has thickened and starts to bubble.
Add spinach, rice, turkey, and 1/4 cup of parmesan cheese.
Spoon mixture into a 2-quart rectangular baking dish. Sprinkle with remaining parmesan cheese.
Bake, covered, in the oven for 20 minutes. Then, uncover and bake for an additional 10 minutes or until fully heated through.
Let stand for 10 minutes before serving.
