3 4-oz cans tuna fish
2 Tbsp plain Greek yogurt
1 Tbsp Dijon mustard
2 tsp Old Bay
1 egg
Lemon juice from half of a lemon
1 tsp hot sauce
2 tsp parsley, dried or fresh
1/4 cup bread crumbs
1 Tbsp olive oil
Boston Bibb lettuce or romaine leaves
Tomato slices
In a medium-sized bowl, combine eggs, yogurt, mustard, Old Bay, hot sauce, parsley, and squeezed lemon juice. Mix well.
Add drained tuna fish. Mix.
Add bread crumbs. Mix well.
Form into four equal (3-oz) patties.
Stovetop: Heat oil in sauté pan until hot. Cook patties. — Bake: Place patties on a greased pan and bake at 400°F for 15 minutes or until cooked through.
Place two patties over a bed of lettuce and tomatoes and serve.
