6 oz shrimp
1/2 cup diced pineapple
1/2 cup diced red onion
1/2 cup diced red bell pepper
1 cup cauliflower rice
1 Tbsp olive or sesame oil
GOLO Teriyaki Sauce (see recipe: https://www.golo.com/blogs/recipes/golo-teriyaki-sauce )
Season and grill or cook shrimp and pineapple. Set aside.
In a medium pan, sauté onion and bell pepper in olive/sesame oil. Add cauliflower rice. When finished, transfer to a bowl.
Heat GOLO Teriyaki Sauce in the same pan. Add shrimp, pineapple, and sautéed vegetables/cauliflower rice mix. Stir to coat evenly.
Remove from heat once sauce has thickened. Serve immediately.
