Ingredients

  • 1 Tbsp olive oil

  • 1 cup red onion, diced

  • 2 cloves garlic, minced

  • 1-1/2 lbs ground beef, 97% lean

  • 4 Tbsp chili powder

  • 2 Tbsp cumin

  • 1 tsp paprika

  • 1 cup zucchini, diced

  • 2 cups bell peppers, diced

  • 2 cups tomatoes, diced

  • 1 jalapeño, minced

  • 1 cup corn, fresh or frozen

  • 1 cup tomato sauce

  • 1 can black beans, 15-oz can (rinsed and drained)

  • 4 cups beef stock

  • Sea salt and pepper, to taste

  • 1-1/4 cups avocado


Directions

  1. Separate into 5 equal servings.

  2. Top with 1/4 cup avocado.

  3. Heat oil in a large pot over medium-high heat. Add onions and garlic. Cook for about 2-3 minutes or until fragrant.

  4. Add beef. Cook until it is brown, stirring occasionally. Drain excess liquid and add chili powder, cumin, and paprika. Mix.

  5. Add zucchini, bell peppers, tomatoes, jalapeno, and corn. Mix well.

  6. Add tomato sauce, beans, and beef stock. Mix.

  7. Cover pot and reduce heat to medium-low heat. Let simmer for about 25 minutes. Stirring occasionally.

  8. Season with salt and pepper.
