Ingredients

  • 12 oz shrimp, cooked with tails removed

  • 4 Tbsp water

  • 2 Tbsp tomato paste

  • 1 Tbsp tamari or soy sauce

  • 2 tsp cornstarch

  • 1 tsp honey

  • 1/2 tsp crushed red pepper

  • 1/4 tsp ground ginger

  • 2 tsp butter

  • 1/4 cup green onions, sliced

  • 4 cloves garlic, minced

  • 4 cups steamed broccoli

  • 1 cup cooked brown rice (measure after cooking)


Directions

  1. In a bowl, combine water, tomato paste, tamari/soy sauce, cornstarch, honey, crushed red pepper and ground ginger. Mix well and set aside.

  2. Heat butter in a large skillet over medium-high heat. Stir in onions and garlic. Cook 30 seconds.

  3. Stir in shrimp. Stir in sauce. Cook and stir until sauce is bubbly and thickened.

  4. Remove from heat.

  5. Divide shrimp and sauce into 2 equal servings. Serve each with 1/2 cup rice and 2 cups broccoli.
