Ingredients

  • 1-1/2 cups whole wheat flour

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/4 tsp sea salt

  • 2 large eggs

  • 1-1/2 cups mashed sweet potatoes

  • 1/3 cup olive oil

  • 1/4 cup brown sugar

  • 1 tsp vanilla extract


Directions

  1. Preheat oven to 350°F.

  2. Spray muffin cups with organic non-stick cooking spray or use cupcake liners.

  3. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.

  4. In a separate bowl, whisk eggs, sweet potato, brown sugar, oil, and vanilla.

  5. Slowly combine dry ingredients with wet ingredients until evenly distributed.

  6. Divide evenly into 12 muffin cups.

  7. Bake 30-35 minutes or until a toothpick comes out clean when inserted into center.
