1-1/2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
2 large eggs
1-1/2 cups mashed sweet potatoes
1/3 cup olive oil
1/4 cup brown sugar
1 tsp vanilla extract
Preheat oven to 350°F.
Spray muffin cups with organic non-stick cooking spray or use cupcake liners.
In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
In a separate bowl, whisk eggs, sweet potato, brown sugar, oil, and vanilla.
Slowly combine dry ingredients with wet ingredients until evenly distributed.
Divide evenly into 12 muffin cups.
Bake 30-35 minutes or until a toothpick comes out clean when inserted into center.
