Sweet Potato Brownies

Ingredients

  • 1 medium sweet potato, baked and skin removed

  • 3 eggs

  • 1/3 cup coconut oil, plus extra for greasing

  • 1/2 cup honey

  • 1-1/2 tsp vanilla extract

  • 3/4 cup oat flour (directions below)

  • 2/3 cup raw cacao powder

  • 1/2 tsp sea salt

  • 1 tsp baking powder


Directions

  1. Preheat oven to 350°F. Grease an 8 x 8-inch baking pan with coconut oil.

  2. To make oat flour, blend whole oatmeal until oats have turned into a fine flour, about 20-60 seconds.

  3. Using a food processor or blender, blend sweet potato, eggs, coconut oil, honey and vanilla extract until smooth.

  4. Transfer to a mixing bowl. Add oat flour, cacao powder, salt and baking powder. Mix well.

  5. Add batter to baking pan and bake 15-17 minutes, or until a toothpick inserted in the center comes out clean.

  6. Remove brownies and let cool completely.

  7. Cut into 20 equal servings.
