2 Eggs
1 Cup Grated Sweet Potato
1 Cup Kale or Spinach
1 Tbsp Olive or Coconut Oil
½ Tsp Cumin
1/8 Tsp Paprika
1/8 Tsp Garlic Salt
Heat 1 tsp oil on frying pan at medium-low heat.
In a mixing bowl whisk 1 egg. Add in grated sweet potato plus seasonings and 1 tsp oil. Mix well until thoroughly combined.
Place mixture on the frying pan and cook. (Makes 2 sweet potato pancakes, “sandwich buns”).
While pancakes are cooking sauté kale/spinach with 1 tsp oil in another pan on medium heat for 3-5 minutes. Season with salt and pepper to taste.
Fry or scramble remaining egg in the same pan (remove kale/spinach or keep in, it’s up to you).
Place one pancake on plate and top with kale/spinach and egg, top with other pancake.
