1 Tbsp tamari or soy sauce
1/2 tsp honey
1 Tbsp rice vinegar
1/2 tsp sesame oil
1/2 cup brown rice, cooked
6 oz shrimp, steamed
1/2 cup cucumber, peeled and chopped
1/2 cup asparagus, steamed and cut into 1-inch pieces
1/4 cup carrots, julienned
1 tsp pickled sushi ginger
1/4 cup avocado
1 sheet dried seaweed, crumbled
Juice from 1 small lemon
1 tsp sesame seeds (optional)
Combine sauce ingredients in a small bowl. Mix well and set aside.
In a serving bowl, combine remaining ingredients, except lemon juice and sesame seeds. Mix well.
Squeeze lemon juice over the top of bowl. Sprinkle with sesame seeds (optional) and drizzle with sauce.
Serve immediately.
