2 oz mini mozzarella balls, halved
3 Tbsp balsamic vinegar
1/2 cup strawberries, sliced
1/2 cup cherry tomatoes, halved
1/4 cup avocado, diced
1/2 cup cucumbers, diced
3 Tbsp sunflower seeds
2-3 Tbsp basil, loosely packed and torn
1/2 tsp olive oil, for drizzling
Salt and pepper to taste
In a small saucepan, bring the balsamic vinegar to a high simmer over medium-low heat. Stir then reduce the heat to low and simmer until the vinegar is thick and reduced by half. This should take about 4-8 minutes. Set aside to cool down.
Place the strawberries, cherry tomatoes, mozzarella, avocado, sunflower seeds, and basil in a bowl. Drizzle with olive oil and season generously with salt and pepper. Gently toss. Drizzle with reduced balsamic vinegar. Serve immediately.
