1/2 small sweet potato, baked (measure out 1/2 cup, cooked)
1 Tbsp almond butter
1/4 cup blueberries
1/4 cup banana, sliced
Sprinkle of cinnamon
1/4 cup sliced almonds
To bake the sweet potato, preheat oven to 400°F. Using a fork, poke holes in potato. Place on the oven rack and bake 30-40 minutes, or until fork-tender.
When sweet potato is done, remove from oven and cut in half.
Drizzle with almond butter. Top with blueberries, bananas, and almonds. Sprinkle with cinnamon.
