Ingredients

  • 1 tsp olive or coconut oil

  • 2 cups onions, chopped

  • 1 cup celery, chopped

  • 1 cup carrots, chopped

  • 1-2 garlic cloves, minced

  • 1 cup sweet potatoes, chopped

  • 3/4 cup dry split peas

  • 4 cups vegetable broth

  • 1/2 tsp dried dill

  • 1/4 tsp turmeric

  • 1/8 tsp cumin

  • 2 tsp dried parsley

  • Pepper, to taste

  • Salt, to taste


Directions

  1. In a large pot over medium heat, add oil. Add onions and stir.

  2. Once onions begin to become translucent add celery, carrots, sweet potatoes, garlic, and split peas. Stir.

  3. Stir occasionally for a few minutes. Add dry seasonings.

  4. Add vegetable broth, stir. Let cook until sweet potatoes are fork tender and split peas are soft.

  5. Turn heat off and put to the side.

  6. Blend the soup until smooth carefully using a blender or an immersion blender stick.

  7. Once smooth to your liking, adjust seasonings if needed.

  8. Divide into 4 serving and serve immediately.
