Spinach Pizza

Ingredients

  • 1-1/8 tsp active dry yeast (half of a .25-oz packet)

  • 1/2 cup warm water

  • 1-1/8 cups whole wheat flour

  • 1/2 tsp salt

  • 1/4 tsp garlic powder

  • 1/4 tsp Italian seasoning

  • 2 tsp olive oil

  • 10 oz frozen spinach, thawed

  • 1 cup tomato sauce

  • 1-1/2 cups mozzarella cheese

  • 1/3 cup Feta cheese

  • Sea salt and pepper to taste

  • Crushed red pepper, basil (optional)


Directions

  1. Place spinach in a strainer and run warm water over it. Use your hands to squeeze out as much water as possible or until it has a dry, slightly crumbly texture. (Excess liquid can make the pizza dough soggy, so don't skip this step). Place spinach back in the strainer. Set aside.

  2. In a small bowl dissolve yeast in warm water. Let stand for about 10 minutes.

  3. In a large bowl combine flour, salt, garlic powder, and Italian seasoning. Make a well in the middle. Add yeast mixture. Mix well.

  4. Cover and set in a warm place to rise for 20 to 60 minutes or until dough has doubled in size.

  5. Preheat oven to 450°F.

  6. Roll dough onto a floured pizza pan. Poke a few holes in it with a fork to prevent air bubbles.

  7. Spread oil evenly over crust, then cover evenly with sauce.

  8. Bake for 5 to 10 or until preferred crispiness.

  9. Remove from oven. Top with mozzarella, spinach, feta, salt and pepper. Return to oven. Cook until cheese has melted and is slightly browned.

  10. Remove from oven. Let cool slightly then cut into 8 slices.

  11. Top with crushed red pepper, basil, or other desired seasonings (optional).
