12 Eggs
1/2 cup whole milk
1/2 cup feta cheese
1 Tbsp olive oil
1 cup onion, chopped
1 cup spinach, chopped
1 Tbsp garlic, minced
6 strips uncured bacon, cooked and chopped
Sea salt and pepper to taste
Preheat oven to 375°F. Coat an 8 x 8-inch pan with organic cooking spray.
In a large skillet, combine onion, spinach, garlic and oil. Sauté until slightly wilted and soft. Pour into greased pan. Set aside.
In a large bowl, beat eggs, then stir in the milk. Add salt and pepper, stir. Set aside.
Add two-thirds of the feta and previously cooked / chopped bacon to onions and spinach. Top with egg mixture. Stir lightly to evenly distribute. Top with remaining bacon and feta.
Bake 40-45 minutes or until a toothpick inserted into center comes out clean.
Divide into 8 equal servings.
