Ingredients

  • 1 Tbsp olive oil

  • 1 cup red onion, diced

  • 3 garlic cloves, minced

  • 1/4 tsp cayenne pepper

  • 1 cup uncooked brown rice

  • 1 12-oz jar salsa

  • 1 cup vegetable broth


Directions

  1. Heat oil in a large skillet.

  2. Sauté onions until golden-brown. Add garlic and cayenne pepper. Cook for 1 minute.

  3. Add dry rice and stir frequently until rice starts to brown.

  4. Add the salsa and vegetable broth. Mix well. Cover with lid.

  5. Bring to a simmer, then reduce heat and continue to simmer until liquid has been absorbed. Add extra broth if liquid is absorbed before rice is completely cooked.

  6. Fluff with a fork. Divide in to 4 equal servings.
