1 Tbsp olive oil
1 cup red onion, diced
3 garlic cloves, minced
1/4 tsp cayenne pepper
1 cup uncooked brown rice
1 12-oz jar salsa
1 cup vegetable broth
Heat oil in a large skillet.
Sauté onions until golden-brown. Add garlic and cayenne pepper. Cook for 1 minute.
Add dry rice and stir frequently until rice starts to brown.
Add the salsa and vegetable broth. Mix well. Cover with lid.
Bring to a simmer, then reduce heat and continue to simmer until liquid has been absorbed. Add extra broth if liquid is absorbed before rice is completely cooked.
Fluff with a fork. Divide in to 4 equal servings.
