Spicy Beef and Vegetable Skillet

Ingredients

  • 12 oz Top Sirloin or Top Loin, cut into 1-inch pieces

  • 1 Tbsp Olive Oil

  • Sea Salt and Pepper to taste

  • 3 Cloves Garlic, minced

  • ½ Cup Onion, chopped

  • 1 Cup Potato, peeled and diced into ½-inch cubes

  • ½ Cup Beef Broth

  • 1 ½ Cup Asparagus

  • 1 Cup Spinach

  • ¾ Cup Yellow Bell Pepper

  • ¼ Cup Jalapeno Pepper

  • 1 tsp Red Pepper Flakes


Directions

  1. Season Beef with Salt and Pepper.

  2. Heat Olive Oil over medium heat and add Garlic, Onion, Jalapeno Pepper and Beef. Sauté for about 10-12 minutes or until Beef is cooked through. Remove from skillet and set aside.

  3. In the same skillet, add Potatoes and Beef Broth. Cook for about 7-10 minutes or until the Potatoes are tender.

  4. Add Asparagus and Yellow Bell Peppers and cook for 4-5 minutes.

  5. Add Spinach and cook for another 2-3 minutes.

  6. Combine the Vegetable mixture with the Beef mixture.

  7. Season with Sea Salt, Pepper and Red Pepper Flakes.

  8. Serve warm.
