12 oz Top Sirloin or Top Loin, cut into 1-inch pieces
1 Tbsp Olive Oil
Sea Salt and Pepper to taste
3 Cloves Garlic, minced
½ Cup Onion, chopped
1 Cup Potato, peeled and diced into ½-inch cubes
½ Cup Beef Broth
1 ½ Cup Asparagus
1 Cup Spinach
¾ Cup Yellow Bell Pepper
¼ Cup Jalapeno Pepper
1 tsp Red Pepper Flakes
Season Beef with Salt and Pepper.
Heat Olive Oil over medium heat and add Garlic, Onion, Jalapeno Pepper and Beef. Sauté for about 10-12 minutes or until Beef is cooked through. Remove from skillet and set aside.
In the same skillet, add Potatoes and Beef Broth. Cook for about 7-10 minutes or until the Potatoes are tender.
Add Asparagus and Yellow Bell Peppers and cook for 4-5 minutes.
Add Spinach and cook for another 2-3 minutes.
Combine the Vegetable mixture with the Beef mixture.
Season with Sea Salt, Pepper and Red Pepper Flakes.
Serve warm.
