Ingredients

  • 1 cup uncooked whole wheat ziti or rotini pasta

  • 1 tsp olive oil

  • 1-1/2 lbs ground beef, 97% lean

  • 1 cup onion, chopped

  • 1, 28-oz can crushed tomatoes

  • 1, 8-oz can tomato sauce

  • 1 cup frozen corn

  • 1 can green chilis, chopped

  • 1/2 tsp ground cumin

  • 1/2 tsp garlic powder

  • 1/4 tsp paprika

  • 1/4 tsp sea salt

  • 1/2 tsp black pepper

  • 1/4 cup minced fresh cilantro

  • 1 lime, cut into 4 wedges


Directions

  1. Cook pasta according to package directions. Drain.

  2. In a large stockpot over medium heat, cook ground beef and onion in oil until meat is no longer pink. Drain fat.

  3. Add tomatoes, tomato sauce, corn, green chilies, cumin, garlic powder, paprika, salt, and pepper.

  4. Bring to a boil then reduce heat to a simmer. Simmer uncovered 5 minutes. Stir in pasta and cilantro. Remove from heat.

  5. Divide into 4 equal servings.

  6. Serve each with a lime wedge.
