1-1/2 lbs top round roast
1/4 cup tamari or soy sauce
1/8 cup water
2 tsp brown sugar
1/2 tsp ground ginger
2 cloves garlic, minced or pressed
2 green onions, sliced into 2-inch pieces
1 Tbsp cornstarch
2 cups cooked soba noodles (measure after cooking)
8 cups broccoli, steamed
Combine beef, soy sauce, water, brown sugar, garlic and ginger in slow cooker. Set to low. Cook 8-10 hours.
Remove meat from liquid and shred on a cutting board, removing excess fat. Cover in a dish to keep hot.
In a small sauce pan, whisk together corn starch and 2 Tbsp water.
Add 1/2 cup liquid from slow cooker to sauce pan. Heat over medium heat, whisking constantly.
Once it bubbles and thickens, pour sauce back into slow cooker. Mix well.
Pour some of the sauce from the slow cooker over the meat.
Divide into 4 equal servings.
Serve each over 1/2 cup noodles topped with steamed broccoli and green onions.
