Slow Cooker Chicken Noodle Soup

Ingredients

  • 1-1/2 lbs boneless skinless chicken breast

  • 5 medium carrots, peeled and chopped

  • 1 medium yellow onion, chopped

  • 4 stalks celery, chopped

  • 3-5 cloves garlic, minced

  • 4 tsp butter

  • 6 cups chicken broth

  • 1 cup water

  • 3/4 tsp dried thyme

  • 1/2 tsp dried rosemary, crushed

  • 2 bay leaves

  • 1-1/2 cups uncooked wide egg noodles

  • 2 Tbsp fresh parsley, chopped

  • 1 Tbsp fresh lemon juice

  • Sea salt and pepper to taste


Directions

  1. In a slow cooker, add chicken, diced carrots, onion, celery, garlic, butter, chicken broth, water, thyme, rosemary, and bay leaves. Season with salt and pepper. Cover and cook on low heat 6-7 hours.

  2. Remove chicken. Let cool for about 10 minutes then dice into bite-sized pieces.

  3. Add egg noodles and parsley to slow cooker. Set temperature to high. Cover and cook 10 minutes, or until noodles are tender. Stir in lemon juice and diced chicken.

  4. Separate into 4 equal servings.
