Slow Cooker Beef Stew

Ingredients

  • 1/2 Tbsp olive oil

  • 2 lbs top round roast, cut into 1-inch cubes

  • Sea salt and pepper to taste

  • 2-1/2 cups baby red potatoes, quartered

  • 3 cups carrots, diced

  • 1 cup onion, diced

  • 3 cups celery, diced

  • 3 cups green beans

  • 2 cloves garlic, minced

  • 1-1/2 cups beef broth

  • 1 Tbsp tomato paste

  • 1-1/2 tsp Worcestershire sauce

  • 1/2 tsp thyme

  • 1/2 tsp rosemary

  • 1/2 tsp paprika

  • 1 Tbsp dried parsley

  • 2 bay leaves

  • 2 Tbsp whole wheat flour


Directions

  1. Heat a large skillet and add oil. Season beef with salt and pepper and cook for 2 to 3 minutes or until browned. Drain excess oil and grease from beef.

  2. Place beef, potatoes, carrots, onion, celery, green beans, and garlic into 6-qt slow cooker.

  3. Stir in broth, tomato paste, Worcestershire sauce, thyme, rosemary, paprika, bay leaves, and parsley. Mix well. Season with salt and pepper to taste.

  4. Cover and cook on low heat for 7 to 8 hours or high for 3 to 4 hours.

  5. In a small bowl, whisk together whole wheat flour and 1/2 cup stew broth. Stir in flour mixture into the slow cooker. Cover and cook on high heat for additional 30 minutes or until thickened.

  6. Remove bay leaves prior to serving.

  7. Divide into 5 equal servings.
