6 oz shrimp, steamed
1-1/2 cups salad greens (we used a combination of spinach & cabbage)
1/4 cup cooked brown rice
1/4 cup pineapple, diced
1/4 cup carrot, shredded
1/4 cup cucumber, diced
Sesame seeds (hulled), white or black (we used a combination)(OPTIONAL)
1 Tbsp mayonnaise
2 tsp coconut aminos or soy sauce
1/2 tsp rice vinegar
Sriracha, to taste
Prepare Spicy Poke Sauce: In a small bowl, combine mayonnaise, coconut aminos/soy sauce, rice vinegar, and sriracha. Mix well. Set aside.
Prepare Bowl: Add all poke bowl ingredients to a large bowl. Top with 1 Tbsp Spicy Poke Sauce and garnish with sesame seeds (optional).
