3 Tbsp olive oil
3 Tbsp all purpose or rice flour
1-1/2 cups onion, diced
1 cup celery, diced
1 cup bell pepper, diced
4 cloves garlic, chopped
1 tsp thyme, chopped
2 cups chicken broth
2 cups tomatoes, diced

1 Tbsp Worcestershire sauce
1-1/2 lbs shrimp, shelled and deveined
2 Tbsp lemon juice (about 1/2 lemon)
Hot sauce to taste
Sea salt and pepper, to taste
Heat olive oil in a large sauce pan over medium heat. When hot, sprinkle in flour while mixing. Simmer, stirring continuously, approximately 5 minutes. The longer you cook the roux, the darker and more flavorful it becomes.
Add onion, celery, peppers, garlic, thyme, broth and tomatoes. Cook 8-10 minutes.
Add Cajun seasoning and Worcestershire sauce. Simmer 20 minutes.
Add shrimp. Simmer until cooked through, about 5 minutes. Remove from heat.
Add lemon juice and season with hot sauce, salt, and pepper to taste.
Divide into 4 equal servings.
