Shrimp Étouffée

Ingredients

  • 3 Tbsp olive oil

  • 3 Tbsp all purpose or rice flour

  • 1-1/2 cups onion, diced

  • 1 cup celery, diced

  • 1 cup bell pepper, diced

  • 4 cloves garlic, chopped

  • 1 tsp thyme, chopped

  • 2 cups chicken broth

  • 2 cups tomatoes, diced

  • 1 Tbsp Worcestershire sauce

  • 1-1/2 lbs shrimp, shelled and deveined

  • 2 Tbsp lemon juice (about 1/2 lemon)

  • Hot sauce to taste

  • Sea salt and pepper, to taste


Directions

  1. Heat olive oil in a large sauce pan over medium heat. When hot, sprinkle in flour while mixing. Simmer, stirring continuously, approximately 5 minutes. The longer you cook the roux, the darker and more flavorful it becomes.

  2. Add onion, celery, peppers, garlic, thyme, broth and tomatoes. Cook 8-10 minutes.

  3. Add Cajun seasoning and Worcestershire sauce. Simmer 20 minutes.

  4. Add shrimp. Simmer until cooked through, about 5 minutes. Remove from heat.

  5. Add lemon juice and season with hot sauce, salt, and pepper to taste.

  6. Divide into 4 equal servings.
