½ cup cooked brown rice
12 oz. shrimp, sautéed with ½ tsp Jerk Seasoning
½ cup fresh pineapple, diced
1/2 cup avocado. diced
Fresh Cilantro, chopped for garnish
Citrus jerk marinade
3 Tbsp lemon juice, freshly squeezed
4 Tbsp orange juice, freshly squeezed
2 tsp honey
1 tsp lemon zest
1 tsp orange zest
1/4 tsp Jerk Seasoning
In a bowl, add all the ingredients to the citrus jerk marinade and mix thoroughly. Toss the rice with the citrus marinade
Divide the flavored rice evenly between 2 bowls.
Top each with equal amounts of shrimp, pineapple, and avocado.
Sprinkle with Cilantro and serve. Enjoy!
